3 Ingredient, 2 Minute, No Bake Cheesecake in a Mug

Some time ago a post popped up on facebook for various “Microwave in a Mug” recipes that absolutely fascinated me. I made brownies… in a mug. It was good. Not as good as some brownies I’ve had, but for ease and time involvement I can’t complain at all.

Now, I adore cheesecake, especially cherry cheesecake, and I’ll happily take the new york style or the no bake stuff. I’m no cheesecake purist. So I googled cheesecake in a mug, and I found a few recipes that I DO want to try out, but I wanted to find the easiest possible, using the fewest (and preferably easily acquired) ingredients. So I basically made my own using a regular no bake recipe. I’m sure there are already no bake versions in a mug done, but I can’t find them, so damn it I made my own.

Ingredients:

1/2 cup cream cheese
1/2 cup frozen whipped topping
2 tbs granulated sugar

Add cream cheese to mug. If cheese has been refrigerated, microwave it on 50% power for 30 seconds, stir.

Add sugar, stir and then microwave an additional 20 seconds on 50%.

Add whipped topping, stir until well mixed.

I suggest allowing it to firm up in the fridge now for about an hour, but you can eat it as is. Perhaps like a fruit dip?

You could add graham crumbs mixed with melted butter as a topping should you so desire, but I find it quite tasty enough on its own, if you just really want some cheesecakey taste. Mmm… cheesecakey.

Man… I want some more now. Ooh. I have caramel sauce!
